Preparation
Prep bread and cheese
Lay out 8 bread slices on a clean work surface. If using mayonnaise, spread about 1/2 teaspoon on one side of each slice (this browns nicely and is optional). Place one slice of cheddar cheese on the un-spread side of 4 bread slices. If adding apple or tomato, place 2–3 thin slices on top of the cheese for each sandwich. Top each with another bread slice, spread side out if using mayonnaise.
If using butter, soften it to room temperature for easy spreading (or microwave 5–7 seconds).
Cooking
Butter the bread
Spread about 1/2 tablespoon of softened butter evenly on the outside of each assembled sandwich (both top and bottom). If you prefer less butter, use 1 teaspoon per side.
Grill the sandwiches
Place 2 sandwiches in the skillet without crowding. Cook 3–4 minutes on the first side over medium-low heat until golden brown and crisp. Press gently with a spatula to encourage even contact. Flip and cook 2–3 minutes on the second side until the other side is golden and the cheese is melted. If cheese isn’t fully melted, cover the pan with a lid for 30–60 seconds to trap heat and finish melting.
Season and rest
If desired, sprinkle a small pinch (about 1/8–1/4 tsp) of black pepper inside before serving. Transfer grilled cheese to a cutting board and let rest 1 minute to cool slightly and let the cheese set.
Slice each sandwich diagonally or down the middle into halves or quarters for kids.
