Method
Brew the coffee
Measure and heat
Measure 2 tablespoons of freshly ground medium-roast coffee. Heat 12 oz of water to just off boiling (195–205°F / 90–96°C).
Brew
Brew the coffee using your preferred method (drip, pour-over, Aeropress, or French press). For best clarity and balance use a pour-over or drip: place grounds in filter, pour a small bloom (about 30–40 ml) and wait 30 seconds, then pour remaining water steadily until you reach 12 oz brewed coffee. Total contact time for pour-over ~2:30–3:30 minutes; French press steep 4 minutes before plunging.
Prepare milk
Heat and texture milk
Warm 6 oz whole milk to about 140–150°F (60–65°C). If you have a steam wand, steam until velvety and create about 1 oz of microfoam. If you don't have a steam wand, heat gently on the stovetop and froth with a handheld frother or whisk until slightly foamy.
Sweeten and assemble
Place 1 teaspoon granulated sugar (and 1 tsp vanilla extract if using) into your cup. Pour the 12 oz brewed coffee into the cup and stir until sugar dissolves.
Slowly pour the warmed milk into the sweetened coffee, holding back foam with a spoon. Spoon the remaining foam on top (about 1 oz). If desired, dust with a pinch of ground cinnamon.
