Cold Brew Concentrate
Combine coffee and water
In a clean 1.5–2 liter (or roughly 6–8 cup) container or jar, add 1 cup coarsely ground coffee. Pour 4 cups cold filtered water over the grounds, pouring in a circular motion to fully saturate the grounds. Gently stir once or twice to ensure all grounds are wet and there are no dry pockets.
Steep
Cover the container with a lid or plastic wrap and let steep at room temperature or in the refrigerator for 16 to 20 hours. Room temperature yields slightly brighter extraction; refrigerating yields a cleaner taste. If using an optional cinnamon stick or vanilla, add it before steeping.
Strain the concentrate
After steeping, strain the coffee through a fine mesh sieve lined with a coffee filter, cheesecloth, or a tightly woven kitchen towel into a clean pitcher or bowl. If necessary, strain a second time to remove fine sediment. You should end up with approximately 4 cups of cold brew concentrate.
Store
Transfer the strained cold brew concentrate to a sealed container and refrigerate. Concentrate keeps well for up to 10 days; best within 5–7 days for optimal flavor.
To Serve
Sweeten if desired. Stir in simple syrup or sweetener to taste (start with 1–2 tablespoons per 12 oz glass). Simple syrup mixes easily into iced drinks; if using granulated sugar, dissolve it first.
Garnish and finish. Add ice as needed and, if desired, a splash of vanilla extract (about 1/8–1/4 tsp per serving) or a fresh cinnamon stick for aroma.
