Heat 1 tablespoon olive oil in a nonstick or well-seasoned 10-inch skillet over medium heat until shimmering. Add the diced onion and cook, stirring occasionally, until translucent and beginning to soften, about 3–4 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown it.
Cook vegetables
Add the diced zucchini and corn to the skillet. Season with 3/4 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, until the zucchini is tender and releases most of its moisture, about 5–7 minutes. If the pan becomes very wet, increase heat for the last minute to evaporate excess liquid so the filling isn't watery.

Whisk eggs
Crack 4 large eggs into a medium bowl. Add 2 tablespoons milk or water, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk vigorously until fully combined and slightly frothy; this yields a light, tender omelette.
Cook the omelette base
Pour the beaten eggs into the skillet and let them sit undisturbed for 10–15 seconds. Using a heatproof spatula, gently pull the cooked edges toward the center while tilting the pan so uncooked eggs flow to the edges. Continue this tilting-and-lifting motion until the surface is mostly set but still slightly glossy on top, about 1–2 minutes.
Add filling and cheese
Spoon the warm calabacitas filling down one half of the omelette in an even layer (about 3/4 cup). Sprinkle 1/2 cup shredded Monterey Jack or crumbled queso fresco over the filling. If you like, add a light drizzle of hot sauce or a spoonful of salsa for extra flavor.
Fold and finish
Using the spatula, carefully fold the empty half of the omelette over the filled half. Let the folded omelette cook another 30–45 seconds so the cheese begins to melt and the center finishes cooking. For a slightly firmer center, cover the skillet for 30–45 seconds before removing from heat.
Serve
Slide the omelette onto a plate. Garnish with remaining chopped cilantro and serve with lime wedges and additional salsa or hot sauce on the side. Enjoy immediately while hot.
