Gather and measure

Remove eggs from the refrigerator to let them approach room temperature for 5–10 minutes if time allows. Measure milk, butter, salt, and pepper. If using garnish, chop chives and grate cheese now.

Crack the eggs into a medium mixing bowl. Add the milk and a pinch (about 1/4 tsp) of the kosher salt. Using a fork or whisk, beat vigorously until yolks and whites are fully combined and slightly frothy — about 20–30 seconds. This aeration makes the eggs tender.

Heat the pan

Place a nonstick or well-seasoned skillet over medium-low heat. Add the butter and let it melt gently. Swirl the pan so butter coats the surface; it should foam but not brown.

Cook the eggs

Pour the beaten eggs into the center of the skillet. Let them sit undisturbed for about 10–15 seconds until the edges begin to set. With a silicone spatula, push the set edges toward the center, tilting the pan so uncooked egg flows to the edges. Continue gently stirring and folding every 10–15 seconds. Total cook time should be 2–4 minutes depending on desired doneness: shorter for creamy, slightly runny eggs; longer for fully set but still tender eggs.

Season and finish

When eggs are almost done but still glossy and slightly undercooked, remove the skillet from heat. Season with the remaining kosher salt (adjust to taste) and freshly ground black pepper. If using cheese, sprinkle it on now so residual heat melts it. Fold gently to combine, then transfer eggs to a warm plate immediately to stop carryover cooking.

Serving

Divide the eggs among plates (serves 2). Garnish with chopped chives and a few drops of hot sauce if desired. Serve immediately with toast or your preferred accompaniment.

Notes: For fluffier eggs, replace milk with an equal amount of water. For creamier texture, stir in 1 teaspoon of creme fraiche or sour cream just after removing from heat.
