Wash and slice
Rinse the cucumber, mint, and dill under cold water. Trim the cucumber ends and slice 6 thin rounds for garnish; reserve. Chop the remaining cucumber into roughly 1-inch pieces (leave skin on for color and extra flavor). Pat the herbs dry and roughly chop the mint leaves and dill fronds to bruise them slightly and release aromatics.

Prep ginger and lime
Peel a small knob (about 1 tablespoon) of fresh ginger and finely grate it. Roll the limes on the counter with your palm to loosen juices, then zest one lime lightly (optional) and juice both limes. Strain the juice to remove seeds and pulp if you prefer a clearer cooler.

Muddle aromatics
In a large pitcher or a sturdy jar, add the chopped cucumber pieces, grated ginger, chopped mint, chopped dill, and the pinch of sea salt. Using a muddler or the back of a wooden spoon, gently muddle the mixture for 30–45 seconds until the cucumber releases juices and the herbs are fragrant. Do not over-muddle to avoid bitterness from herbs.

Add sweetener and lime
Pour in the 2 tablespoons simple syrup (or honey syrup) and the strained lime juice. Stir to combine and let the mixture sit for 5–10 minutes to macerate, allowing flavors to meld.

Strain and combine
Place a fine mesh strainer or cheesecloth over a clean pitcher or bowl. Pour the cucumber-herb mixture through the strainer, pressing gently on solids with the back of a spoon to extract as much liquid and flavor as possible. Discard the solids (or reserve for another use like a salad topping).

Adjust and dilute
To the strained concentrate, add 4 cups cold water or sparkling water depending on desired fizziness. Taste and adjust: add up to 1 tablespoon more simple syrup if you prefer sweeter, or more lime juice if you want brighter acidity. If using still water and you want chilled, add the ice to the pitcher now; if using sparkling water, add ice to individual glasses to avoid flattening the carbonation.

Make-ahead notes
The cucumber-herb concentrate can be made and refrigerated, covered, for up to 48 hours. Add water and ice only when ready to serve to keep flavors fresh and avoid dilution.
