Prepare vanilla
If using a whole Tahitian vanilla bean: split the bean lengthwise with a sharp knife and scrape the seeds into a small bowl. If using vanilla paste, measure the equivalent (about 1/2 to 1 tsp paste). Reserve the pod for infusion or garnish.

Make vanilla-infused rum (quick method)
If you don't have pre-infused rum, combine 2 oz of light or gold rum with the scraped vanilla seeds and 1/4 tsp of the vanilla pod in a sealed jar and let sit for at least 30 minutes to an hour for a quick infusion. For best results prepare 1 week ahead with 1–2 vanilla beans per 250 ml rum. If you already have vanilla rum, skip this step.

Mix cocktail
In a cocktail shaker, add the vanilla-infused rum (2 oz), coconut rum (1 oz), pineapple juice (2 oz), passion fruit puree or juice (0.75 oz), fresh lime juice (0.5 oz), simple syrup (0.25 oz), and a dash of Angostura bitters if using. Add 4 ice cubes and shake vigorously for 12–15 seconds until well chilled.

Strain and serve
Double-strain the shaken cocktail over the crushed ice using a Hawthorne strainer and a fine mesh strainer to remove any solids and vanilla pod bits. Pour gently to maintain a layered look.

Garnish
Garnish with a pineapple wedge, a lime wheel, a dusting of toasted coconut flakes on top, and lay the reserved vanilla pod across the glass for aroma and visual appeal.

Optional adjustment
Taste and adjust: add 0.25–0.5 oz more simple syrup if you prefer sweeter, or an additional 0.25 oz lime juice if you want brighter acidity. If you prefer stronger vanilla character, add a small scrape of vanilla seeds directly into the shaker next time.
