    In a small saucepan, combine 1 cup heavy cream, 1 tablespoon granulated sugar, and 1 teaspoon fine sea salt. Warm over medium heat until steam rises and small bubbles appear at the edge (do not boil), about 3–4 minutes.

    Bloom chocolate

    Pour the hot cream mixture over the chopped chocolate. Let sit undisturbed for 2 minutes to soften the chocolate shards.

    Emulsify

    Using a spatula, gently stir from the center outward until the chocolate and cream form a smooth, glossy emulsion. Add 2 tablespoons unsalted butter and continue stirring until fully incorporated and the mixture is silky.

Flavor Enhancements

    Add espresso and vanilla

    Stir in 1 tablespoon hot espresso (or strong coffee) and 1 teaspoon pure vanilla extract into the chocolate mixture. These deepen the chocolate's flavor and help highlight the Peruvian beans' notes.

    Fold in 1 teaspoon finely grated orange zest. Stir briefly to distribute the citrus oils without cooling the chocolate too quickly.
