    Toast the pistachios if they are raw: preheat oven to 325°F (160°C). Spread pistachios in a single layer on a baking sheet and toast 6–8 minutes until aromatic and slightly browned. Cool completely.

    Blanching (optional, for brighter green)

    If you prefer a brighter green paste, blanch pistachios: bring a pot of water to a boil, add pistachios for 30–45 seconds, drain, and rub skins off with a towel. Dry thoroughly before proceeding.

    Place cooled pistachios, powdered sugar, salt, and warm water in a food processor or high-speed blender. Pulse until a coarse meal forms, scraping down sides as needed.

    With the motor running, stream in the neutral oil slowly until the mixture turns into a smooth, thick paste. This can take 3–6 minutes depending on your equipment. Scrape down and process until silky. Adjust salt or sugar to taste. Transfer to a bowl and set aside.

Custard Base

    Combine milk and cream in a medium saucepan. Warm over medium heat until just below simmer (small bubbles around the edge), about 170–175°F (75–80°C). Do not boil. Remove from heat.

    In a medium bowl, whisk together granulated sugar, cornstarch, and egg yolks until pale and slightly thickened, about 1–2 minutes.

    Temper the yolks: slowly drizzle about 1/3 cup of the warm milk mixture into the yolks while whisking constantly to raise their temperature. Repeat with another 1/3 cup.

    Pour the tempered yolk mixture back into the saucepan with the remaining warm milk and cream, whisking constantly.

    Return saucepan to low–medium heat and cook, stirring constantly with a heatproof spatula or whisk, until the custard thickens enough to coat the back of the spatula (170–180°F / 77–82°C). This should take 4–8 minutes. Do not let it boil.

    Remove from heat. Stir in vanilla extract.

    Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits for a silky texture.

    Cool slightly (5–10 minutes), then cover the surface with plastic wrap to prevent a skin from forming. Chill in the refrigerator until thoroughly cold, at least 2 hours or overnight for best texture.

Finish & Churn

    When the custard is cold, whisk the reserved pistachio paste into the custard until fully incorporated. If desired, add the optional pistachio liqueur and adjust salt to taste with fleur de sel (start with 1/4 tsp). The mixture should be uniformly pale green and intensely pistachio-flavored.

    Chill the combined mixture in the refrigerator for 30 minutes so it is very cold before churning (this helps texture).

    Churn the mixture in an ice cream maker according to manufacturer’s instructions until it reaches a soft-serve consistency (usually 20–30 minutes).

    Fold in the chopped toasted pistachios in the last 2–3 minutes of churning or by hand immediately after churning for bits of texture.

    Transfer the gelato to a shallow airtight container, smooth the top, press a piece of parchment directly onto the surface to minimize ice crystals, and freeze at least 4 hours to firm up.

    Before serving, let the gelato sit at room temperature 5–10 minutes to soften slightly for scoopable, creamy texture. Sprinkle a pinch of extra chopped pistachios and a few flakes of sea salt on top if desired.
