Mango Sorbet

Prepare sugar syrup
Combine 2 tablespoons water and 3 tablespoons granulated sugar in a small saucepan over medium heat. Stir until sugar dissolves and the syrup is clear. Remove from heat and cool to room temperature.

Place 3 cups ripe mango purée in a blender or food processor. Add cooled sugar syrup, 1 tablespoon fresh lime juice and 1 teaspoon fine sea salt. Blend on high until completely smooth and homogeneous, about 30–45 seconds. Taste and adjust lime or salt if needed.

Chill the mango mixture thoroughly in the refrigerator (at least 1 hour) until below 40°F/4°C; colder mixture churns better.

Churn in an ice cream/sorbet machine according to manufacturer instructions until soft-scoop consistency (typically 20–30 minutes). Transfer to an airtight container and freeze at least 2 hours to firm up before serving. If texture becomes too hard, allow 5–10 minutes at room temperature before scooping.
Coconut Sorbet

In a bowl whisk together 2 cups full-fat coconut milk, 1 cup unsweetened coconut water, 1 tablespoon sugar and 1 tablespoon corn syrup (if using) until sugar dissolves. Add 1 teaspoon fresh lime juice and 1 teaspoon fine sea salt; taste and adjust salt or lime to brighten flavor.

Chill the coconut mixture thoroughly (at least 1 hour). Because coconut milk is rich, ensure the mix is well-chilled for best churned texture.

Churn in an ice cream/sorbet machine until thickened to a creamy sorbet texture (about 25–35 minutes). Transfer to an airtight container and freeze 2–4 hours for serving. If too firm, let sit 5 minutes at room temperature before scooping.
Yuzu-Avocado Sorbet

Prepare simple syrup ahead (1:1 sugar to water). For this recipe use 1 tablespoon chilled simple syrup. Combine 1 tablespoon chilled simple syrup with 2 tablespoons water if needed to loosen.

Place 1 cup ripe avocado flesh in a blender. Add 3 tablespoons yuzu juice (or 2 tbs yuzu + 1 tbs lemon), chilled simple syrup, 1 teaspoon neutral oil (optional) and a pinch of fine sea salt. Blend until ultra-smooth, about 45–60 seconds. Strain through a fine-mesh sieve into a bowl to remove any fibrous bits for the silkiest texture.

Churn in an ice cream/sorbet machine following manufacturer directions; churn until thick and scoopable (20–30 minutes). Transfer to airtight container and freeze 2 hours to firm. Note: for best color and freshness, serve within 2–3 days; add a light brush of yuzu juice on the surface before sealing to reduce browning if storing longer.
Grapefruit-Hibiscus Sorbet

Make hibiscus infusion and syrup
Bring 1 cup water to a simmer. Remove from heat, add 2 teaspoons dried hibiscus flowers (or 2 tea bags) and steep 8–10 minutes until deeply colored and aromatic. Strain, pressing on flowers, and return infused liquid to a small saucepan. Add 1 cup granulated sugar and warm gently, stirring until sugar dissolves. Cool syrup to room temperature.

Combine 2 cups fresh grapefruit juice, cooled hibiscus-sugar syrup, 1 tablespoon fresh lemon juice, 1 teaspoon finely grated grapefruit zest (if using) and a pinch of fine sea salt in a bowl. Taste and adjust sweetness or acid balance; hibiscus brings tartness and floral notes—add up to 1–2 tablespoons more syrup if needed for sweetness.

Chill the grapefruit-hibiscus mixture thoroughly (at least 1 hour).

Churn in an ice cream/sorbet machine until thickened and smooth (about 20–30 minutes). Transfer to an airtight container and freeze 2–4 hours to firm before serving. If too icy after freezing, let sit 5–10 minutes at room temperature to soften slightly.
Plating & Serving

Portion: For a selection of four sorbets, scoop approximately 2 small quenelles or 1 medium scoop (about 1/3 cup) of each flavor per serving. Place on chilled plate or in a coupe with a small space between each flavor.

Garnish: Mango — a small lime wedge or micro mint; Coconut — toasted coconut flakes; Yuzu-Avocado — thin citrus zest or micro herbs; Grapefruit-Hibiscus — a thin grapefruit wedge or edible hibiscus petal. Use neutral garnishes as desired.
