    Toast pistachios

    Preheat oven to 350°F (175°C). Spread the 2 cups of raw shelled pistachios in a single layer on a rimmed baking sheet. Toast for 6–8 minutes until fragrant and slightly darker (watch carefully so they don’t burn). Remove from oven and let cool briefly, then transfer to a bowl. Toasting intensifies flavor and reduces moisture.

    Prepare caramel

    In a medium heavy-bottomed saucepan, combine 1 cup granulated sugar, 2 tablespoons water, and 1 teaspoon light corn syrup (if using). Place over medium heat and stir gently until sugar dissolves. Stop stirring and let the syrup come to a boil. Swirl the pan occasionally for even color. Continue cooking until the syrup turns a deep amber (about 340–350°F / 170–177°C on a candy thermometer). Watch closely — caramel can go from amber to burn quickly.

    Add pistachios to caramel

    When the caramel reaches a deep amber color, quickly remove the pan from the heat and immediately add the toasted pistachios and 1 teaspoon fine sea salt. Stir quickly and carefully with a heatproof spatula to coat the nuts evenly. The caramel will harden somewhat as you stir — work briskly to coat all nuts before it sets.

    Cool and set

    Pour the hot caramel-coated pistachios onto a silicone mat or parchment-lined sheet in a single layer. Spread them out as much as possible to cool and harden (about 20–30 minutes). Do not refrigerate — allow to come to room temperature so the caramel sets with a glossy finish.

    Break into pieces

    Once fully cooled and hard, transfer the praline to a cutting board and break into smaller pieces with the back of a heavy knife or a rolling pin. Aim for 1/2–1 inch pieces; smaller pieces will process more evenly into paste.

    Process into praliné paste

    Place the cooled praline pieces into a food processor. Pulse several times to break them down, then run continuously. The mixture will go through stages: coarse crumbs → fine powder → clumping paste → smooth glossy paste (praliné). This can take 5–12 minutes depending on machine power. Stop occasionally to scrape down the sides. If the mixture seems dry or the motor strains, add 1–2 teaspoons neutral oil and continue processing. For a silkier texture, add 1 tablespoon unsalted butter toward the end and process until incorporated.

    Adjust seasoning & texture

    Taste and, if desired, adjust with a tiny pinch more sea salt to balance sweetness. If you prefer a looser paste, add up to another teaspoon of neutral oil and process briefly. Transfer praliné paste to an airtight jar.

Storage and Use

    Store the pistachio praliné in an airtight container in the refrigerator for up to 3 weeks or in the freezer for up to 3 months. Bring to room temperature and stir before use. Use as a filling for chocolates, a swirl in ice cream, a flavoring for mousses and buttercreams, or spread on toast.
