Pistachio Praliné

Toast Pistachios
Preheat oven to 350°F (175°C). Spread 1 cup raw shelled pistachios on a baking sheet in a single layer and toast for 6–8 minutes until aromatic and lightly browned. Remove and let cool slightly.

Make Caramel
In a medium heavy-bottomed saucepan, combine 0.5 cup granulated sugar and 2 tbs water over medium heat. Without stirring, swirl the pan occasionally until the sugar dissolves and turns a deep amber color (watch carefully to avoid burning).

Combine Pistachios and Finish Praliné
As soon as the caramel reaches color, remove from heat and quickly stir in the toasted pistachios, 1 tbs unsalted butter and 0.25 tsp fine sea salt. Mix until nuts are evenly coated. Pour the coated nuts onto a silicone mat or parchment paper and spread thinly. Let cool completely until hard, about 20–30 minutes. Once cool, pulse in a food processor to desired texture: for praliné paste keep processing until it becomes a coarse paste, for chopped praliné pulse briefly to create 0.5 cup chopped pieces. Reserve 0.5 cup chopped/paste for assembly and the rest can be stored.

Bloom Gelatin
Sprinkle 1.5 tsp unflavored powdered gelatin over 2 tbs cold water in a small bowl. Let sit 5–7 minutes to soften (bloom).

Warm Milk
In a small saucepan, warm 0.75 cup whole milk with 0.25 cup granulated sugar over medium heat just until sugar dissolves and milk is steaming but not boiling.

Temper Egg Yolks
In a medium heatproof bowl, whisk 3 large egg yolks. Slowly pour about 1/3 of the hot milk into the yolks while whisking constantly to temper. Then return the tempered yolks to the saucepan with the remaining milk and cook over low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens slightly and coats the back of the spoon (nappe), about 3–5 minutes — do not boil.

Finish Custard & Add Gelatin
Remove custard from heat. Squeeze excess water from the bloomed gelatin and stir into the hot custard until fully dissolved. Add 3 tbs Grand Marnier and 0.5 tsp vanilla extract; stir to combine. Taste and adjust: if you want stronger orange flavor, add up to 1 more teaspoon Grand Marnier, but note alcohol can reduce set.

Cool Custard
Transfer custard to a clean bowl and cool to lukewarm (about 20–30 minutes), stirring occasionally to release heat. Custard should be cool enough that it won't deflate whipped cream but not set.

Whip Cream
While custard cools, whip 1.5 cups chilled heavy cream with a hand mixer or whisk to soft peaks. Do not overwhip; it should form a smooth, billowy texture.

Fold Together
Gently fold one-third of the whipped cream into the cooled custard to lighten it, then fold in the remaining whipped cream in two additions until homogeneous and airy. If using praliné paste (more spreadable), swirl 2–3 tbs into the bavarois at this stage if you want內a marbled pistachio flavor; if using chopped praliné, hold for assembly.

Set Bavarois
Spoon or pipe bavarois into individual molds, ramekins, or a single ring mold. Sprinkle a layer of the chopped pistachio praliné (about half of the reserved 0.5 cup) into the middle or on top as desired. Smooth surface. Cover and refrigerate until firmly set, at least 4 hours or overnight for best texture.
Assembly & Garnish

Unmold bavarois by briefly dipping the molds into warm water (not more than a few seconds) and inverting onto serving plates. If using ramekins, run a thin knife around the edge to loosen.

Scatter remaining chopped pistachio praliné on top of each bavarois. Garnish with extra toasted whole pistachios and candied orange zest or a few fresh orange segments if desired. Serve chilled.
