Pineapple Granité
Make the pineapple purée
Place the chopped pineapple, 2 tbsp sugar, 1 tbsp fresh lime juice, 2 tbsp water, and 1 tsp fine sea salt into a blender. Purée on high until completely smooth, about 45–60 seconds. Taste and adjust sweetness or acidity — add the optional 1 tsp liqueur if using for extra aroma.
Chill and freeze
Strain the purée through a fine-mesh sieve into a shallow metal or glass baking pan (to help freezing evenly), pressing on solids to extract as much liquid as possible. Cover and chill in the refrigerator for 30 minutes to improve texture and speed freezing.
Form the granité
Place the chilled purée in the freezer, uncovered. After 45 minutes, use a fork to scrape the edges and break up any ice crystals. Repeat scraping every 30–45 minutes for 3–4 hours, until the mixture is flaky and crystalline. Alternatively, for a quicker method, freeze until partially solid (about 2 hours) and process in a food processor in short pulses, then return to the pan to freeze until flaky. Keep the finished granité in the freezer, lightly covered, until plating.
Papaya Confit
Warm a small nonstick skillet over medium-low heat. Add 1/2 tbsp unsalted butter and let it melt gently. Add the diced papaya and 1 tbsp demerara or light brown sugar. Cook, stirring occasionally, until the papaya releases juices and becomes glossy but still holds shape, about 4–6 minutes.
Add 1/2 tbsp fresh lime juice, 1/2 tsp grated lime zest, 1/4 tsp vanilla extract, and a pinch (about 1/4 tsp) of salt. Continue cooking for 1–2 minutes to meld flavors. Remove from heat and let cool to room temperature. The confit can be made several hours ahead and refrigerated; bring to cool temperature before plating.
Tamarind Sorbet (for plating)
Combine 2 tbsp tamarind paste and 1 cup warm water in a bowl and whisk until smooth. Strain through a fine sieve to remove fibers and seeds, pressing to extract liquid. Stir in 3/4 cup granulated sugar, 1 tbsp fresh lime juice, and 1/8 tsp salt until the sugar dissolves. Chill the mixture thoroughly in the refrigerator, about 30 minutes.
Churn the chilled tamarind syrup in an ice cream maker according to the manufacturer's instructions until it reaches a soft-sorbet consistency (typically 20–30 minutes). Transfer to a container and freeze for at least 2 hours to firm up. If you don't have an ice cream maker, place the chilled syrup in a shallow pan in the freezer and stir vigorously every 30 minutes until evenly frozen and smooth, about 2–3 hours.
Assembly & Garnish
Place about 1–2 tablespoons of papaya confit on top or to the side of each portion of granité.
Add a small quenelle or scoop (about 1.5–2 tablespoons) of tamarind sorbet beside the granité for contrast in temperature and flavor.
Garnish each serving with 1–2 fresh mint leaves, a sprinkle (about 1/2 tsp) of toasted coconut flakes if using, and a thin pineapple chip or slice. Serve immediately so the granité keeps its crystalline texture.
