Prepare Workstation & Condiments

    Chill serving bed

    Spread crushed ice in a shallow serving platter or on a rimmed tray to create a stable, cold bed for the oysters. Pile evenly so shells sit level and won’t tip.

    Make or portion condiments

    If you haven’t pre-made mignonette, combine 3 tbsp red wine vinegar with 1 tbsp finely minced shallot and a pinch of salt and pepper; let sit 10–15 minutes. Portion cocktail sauce, horseradish, hot sauce, and chopped parsley into small bowls for easy service.

    Prepare lemon

    Halve the lemon crosswise and remove any seeds so guests can easily squeeze fresh juice over oysters.

Shucking & Plating Oysters

    Safety and position

    Fold a thick kitchen towel over one hand or put on a cut-resistant glove. Hold the oyster with the hinge (pointed end) facing you and the flatter shell up in your protected hand.

    Insert knife and pop hinge

    Place the tip of the oyster knife at the hinge and give a firm, controlled twist or push until the shell pops open. Work deliberately to avoid slipping.

    Run knife to open

    Run the blade along the inside of the top shell to cut the adductor muscle. Lift and remove the top shell, keeping the oyster level to retain its liquor (the briny liquid). Discard the top shell into the small waste bowl.

    Free oyster from bottom shell

    Slide the knife under the oyster to sever the bottom adductor muscle, freeing the oyster in its cupped shell. Check for and remove any shell fragments.

    Plate oysters

    Place each shucked oyster, cup-side down so it holds its liquor, onto the bed of crushed ice. Arrange six oysters spaced evenly.

    Garnish and finish

    Add a small mound of grated horseradish and a dollop of cocktail sauce to the side of the platter, and spoon mignonette into a small serving dish. Sprinkle a little chopped parsley over the ice if desired. Place lemon halves and hot sauce at the side.

Serving & Eating

    Serve immediately while oysters are cold. To eat, squeeze a bit of lemon (or spoon a small amount of mignonette), add hot sauce or horseradish to taste, tip the shell to your lips and slurp the oyster and its liquor. Discard shells in the waste bowl.

    Storage note: Consume oysters the same day of purchase. Keep unshucked oysters covered with a damp cloth on ice in the refrigerator if you must hold them for a few hours; do not store submerged in fresh water.
