Build the base
In a mixing glass or shaker filled with ice (about 1 cup), pour 1.5 oz Amaro Averna and 0.5 oz crème de cassis. Stir gently for 15–20 seconds to chill and slightly dilute the amaro and cassis. Stirring preserves the effervescence of the sparkling wine compared with shaking.

Top with bubbles
Carefully pour 3 oz sparkling wine down the side of the glass to preserve carbonation, then add 1 oz soda water to lift and lighten the drink. Pour slowly to avoid excessive foaming.

Garnish and serve
Twist a lemon peel over the drink to express oils, rub the rim lightly with the peel, and drop it into the glass. Optionally thread 1–2 fresh blackberries on a cocktail pick and rest it across the rim or drop them into the drink. Serve immediately.

Notes
Adjust crème de cassis to 0.25–0.75 oz to taste — more for a sweeter, fruit-forward profile. Use a dry sparkling wine if you want the cocktail less sweet. If serving multiple, scale ingredients per serving and build in a chilled pitcher, then top each glass with sparkling wine and soda to keep bubbles fresh.
