Method

Chamomile & Rose Honey Syrup

    Steep and strain

    Place the dried chamomile flowers and dried rose petals in a small heatproof bowl or jar. Pour the hot water (about 3 tbsp) over the botanicals and let steep for 5 minutes to extract floral flavor.

    Make syrup

    Stir the honey into the hot floral infusion until fully dissolved. Taste and, if needed, add a little more hot water (a teaspoon at a time) to reach a pourable syrup consistency. Strain through a fine mesh or coffee filter into a small container, pressing solids to extract liquid. Cool to room temperature before using. (Yield ~3 tbsp — double the recipe if you want more.)

Cocktail Assembly

    Dry shake (if using egg white)

    Add Great Jones Bourbon (2 oz), Amaro Sibilla (1/2 oz), fresh lemon juice (3/4 oz), chamomile & rose honey syrup (3/4 oz) and the egg white (1) into a cocktail shaker without ice. Dry shake vigorously for 15–20 seconds to emulsify and build foam.

    Wet shake

    Add a generous handful of ice to the shaker (about 1 cup). Shake hard for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.

    Strain

    Double strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any botanical bits.

    Finish & garnish

    If desired, add 1 dash of rosewater or Angostura bitters on the foam and gently swirl with a toothpick for a decorative touch. Garnish with a single dried chamomile flower or a small rose petal and a lemon twist expressed over the drink placed on the rim.
