    Make honey syrup (if not prepared)

    Combine 2 parts honey and 1 part very hot water (for example 4 tablespoons honey + 2 tablespoons hot water) in a small jar or cup. Stir until thoroughly combined and slightly cooled. Refrigerate any unused syrup and use within 2 weeks.

    Chill glass

    Place a coupe or chilled rocks glass in the freezer or fill with ice water while you prepare the cocktail to chill it.

    Combine and shake

    Add 2 oz Reisetbauer Blue Gin, 0.75 oz fresh lemon juice, and 0.75 oz honey syrup into a cocktail shaker. Fill the shaker with about 6 ice cubes. Secure the lid and shake vigorously for 10–15 seconds, until the shaker is very cold and slightly frosted.

    Double strain and serve

    Discard the ice water from the chilled glass (if used). Using a Hawthorne strainer and a fine mesh strainer, double-strain the shaken cocktail into the chilled coupe or rocks glass to remove ice shards and any pulp.

    Garnish

    Express the oils of a lemon twist over the drink or float a thin lemon wheel on top, then place the twist on the rim or in the glass.

    Tasting notes

    The floral and slightly citrusy character of Reisetbauer Blue Gin pairs with the bright lemon and rounded sweetness of honey syrup for a well-balanced Bee's Knees. Adjust honey syrup to taste (±0.25 oz) if you prefer sweeter or tarter.
