Method
Cheeses
- 1
Temper and slice cheeses
Remove all cheeses from refrigeration 30–45 minutes before serving so they come to room temperature — this enhances aroma and flavor. While resting, unwrap and pat dry any moist rinds with a paper towel. Slice the Manchego and Cheddar into 1/4-inch-thick wedges or small chunks; cut the Brie into 1/2-inch-thick wedges, leaving the wheel intact if possible; break or quarter the blue cheese into bite-sized pieces.
- 2
Label or arrange cheeses with small markers (optional) so guests know what each cheese is.

Add nuts, fruit, and pickles
Scatter Marcona almonds in a small pile. Rinse and dry grapes or seasonal fruit and place them in small clusters. Arrange cornichons near the blue or cheddar to cut richness.

Assemble the board
On a wooden board or platter, place cheeses spaced apart so guests can cut without crowding. Position ramekins of condiments between cheeses. Fill gaps with crackers, baguette slices, nuts, grapes, and pickles. Tuck herb sprigs around the board for visual appeal.
- 7
Optionally drizzle a teaspoon of extra-virgin olive oil over the blue or a corner of the Brie and finish the blue or soft cheese with a light crack of black pepper.
- 8
Provide a separate knife for each cheese (soft cheese knife for Brie, hard cheese knife for Manchego/Cheddar, spreader for blue). Serve immediately after cheeses have reached room temperature.
