Makrut Lime Leaf Infused Agave Syrup (makes ~3/4 cup)

Method

Makrut Lime Leaf Infused Agave Syrup

    Make syrup

    Combine 0.5 cup agave nectar and 0.25 cup water in a small saucepan over low heat. Stir to combine until the mixture becomes homogenous and slightly thinned (about 1–2 minutes). Do not boil.

    Infuse

    Add 6 bruised makrut lime leaves to the warm agave mixture. Maintain very low heat (or remove from heat) and let the leaves steep for 20–30 minutes, stirring once or twice. Taste after 20 minutes—the syrup should carry a bright citrus-herbal fragrance. If you want stronger aromatics, steep up to 45 minutes off heat.

    Strain and cool

    Strain out the leaves through a fine mesh sieve, pressing lightly to extract flavor. Cool the infused syrup to room temperature, then refrigerate in a sealed container. Syrup will keep 2–3 weeks refrigerated.

Garnish & Rim Preparation

    Prepare makrut-scented salt

    In a small bowl combine 1 tsp coarse sea salt with 0.25 tsp finely grated makrut lime zest. Rub the zest into the salt with your fingers to release oils and evenly distribute the fragrance.

    Rim glass

    Run a lime wedge around the lip of a rocks glass, then dip the rim lightly into the makrut-scented salt to coat. Shake off excess.

Cocktail Assembly

    Muddle leaf (optional)

    If you want a more herbal accent, place 1 makrut lime leaf in a mixing tin and gently clap or tear it to release oils. Do not over-muddle into a paste—just a gentle bruise to lift aroma.

    Build the drink

    Add 2 oz Mezcal Espadín (Capón), 0.75 oz fresh lime juice, 0.5 oz makrut lime leaf infused agave syrup, the bruised makrut leaf (if using), and ice (preferably large cubes) to a mixing tin or shaker.

    Stir or shake

    If using the bruised leaf in the tin, gently stir with a bar spoon for 12–15 seconds to chill and integrate without over-dilution. If not using the leaf or you prefer more aeration, shake vigorously for 8–10 seconds and then double-strain into the prepared rocks glass over fresh ice (1–2 large cubes).

    Finish & garnish

    Express a fresh makrut lime leaf or a lime wheel over the drink to release top aromatics, then discard or float the leaf as garnish. Place the lime wheel or wedge on the glass rim. Serve immediately.
