Measure and prep

Measure out coconut water and coconut milk. If using fresh pineapple, cut into chunks; if using frozen, measure directly. Grate a small piece of fresh ginger and squeeze fresh lime to yield 1 tablespoon.

Blend

Combine in blender

Add 1 cup fresh coconut water, 1/4 cup unsweetened canned coconut milk, 1/2 cup pineapple chunks, 1 tablespoon fresh lime juice, 1 teaspoon honey or agave, and 1/2 teaspoon grated fresh ginger into a high-speed blender.

Adjust texture

Add 1 cup ice cubes and the optional 1/4 cup frozen banana if you want a creamier, thicker texture. Secure lid.

Blend until smooth

Blend on high for 30–60 seconds, or until the ice is fully crushed and the mixture is silky. If mixture is too thick, add up to 2 tablespoons more coconut water; if too thin, add a few more ice cubes or the remaining frozen banana.

Sweetness & acidity check

Taste the drink and adjust sweetness with an additional 1/2 teaspoon honey/agave if desired, and adjust brightness with another 1/2 teaspoon lime juice if needed.

Pour and garnish

Pour the VITA COCONUT into a chilled glass. Garnish with a lime wheel on the rim, a small sprig of mint, and sprinkle 1 teaspoon toasted coconut flakes on top.
