Sweet Potato Fries
Preheat and prepare
Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper or lightly oil it to prevent sticking.
Cut the potatoes
Peel (optional) and cut sweet potatoes into 1/4–1/2-inch thick fries. Aim for uniform thickness so they cook evenly. Rinse cut fries under cold water to remove excess starch.
Dry thoroughly
Pat the rinsed fries very dry with clean kitchen towels or paper towels. Removing surface moisture helps achieve crispness.
Coat with cornstarch and oil
Place dried fries in a large bowl. Sprinkle the cornstarch over the fries and toss to coat evenly. Add the olive oil, salt, and black pepper, and toss until each fry is lightly coated.
Arrange for baking
Spread fries in a single layer on the prepared baking sheet, making sure they do not overlap. For maximum crispness use two trays if necessary.
Bake
Bake in the preheated oven for 15 minutes. Remove tray, flip fries using a spatula, then return to oven and bake another 10–15 minutes until edges are browned and fries are crisp. Total baking time ~25–30 minutes depending on oven and fry thickness.
Broil finish (optional)
If you want extra crispness, broil on high for 1–2 minutes while watching closely to avoid burning.
Onion & Garlic Salt
While fries bake, combine onion powder, garlic powder, smoked paprika (if using), and fine sea salt in a small bowl and mix thoroughly to make the onion & garlic salt seasoning.
When fries are hot from the oven, transfer them to a large bowl or serve on the tray and immediately sprinkle the onion & garlic salt evenly over the fries so the seasoning adheres. Toss gently to coat.
Finishing
If using, sprinkle chopped fresh parsley over the seasoned fries and serve with lemon wedges on the side for a bright finish. Serve hot.
