Method
Classic Lemon-Lime Soda (per 1 serving)
Prepare glass
Fill a tall glass with 4 ice cubes.
Combine citrus and sweetener
Add 1 tablespoon fresh lemon juice, 1 tablespoon fresh lime juice and 1 teaspoon simple syrup to the glass. Stir gently to combine and slightly chill the juice mixture with the ice.
Top with carbonation
Pour 1 cup cold carbonated water over the mixture, pouring slowly to retain bubbles. Stir gently once or twice with a bar spoon to incorporate—do not over-stir to avoid losing fizz.
Homemade Ginger Ale (per 1 serving)
Prepare glass
Fill a highball glass with 4 ice cubes.
Add syrup and lemon
Measure 1.5 teaspoons fresh ginger syrup into the glass, add 1/2 tablespoon fresh lemon juice.
Top with carbonated water
Slowly pour 1 cup cold carbonated water into the glass to preserve carbonation. Stir gently once to combine.
Garnish and taste
Float a thin slice of ginger on top or place on the rim. Taste and add up to 1/2 teaspoon more ginger syrup if you prefer a spicier ginger flavor. Serve immediately.
Fizzy Fruit Soda (per 1 serving)
Prepare fruit base
If using whole fruit, puree 2 tablespoons fruit until smooth. Combine 2 tablespoons fruit puree or juice with 1 teaspoon simple syrup and 1/2 tablespoon fresh lemon juice (optional) in a glass. Stir to combine.
Assemble
Fill the glass with 4 ice cubes. Pour 1 cup cold carbonated water over the fruit mixture. Stir gently once to incorporate.
Garnish
Garnish with a mint sprig or a slice of the fruit used. Adjust sweetness with extra simple syrup if desired and serve immediately.
Batch Simple Syrup (makes about 1 cup)
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring until the sugar fully dissolves. Once dissolved and the syrup is clear, remove from heat and let cool to room temperature. Transfer to a clean jar and refrigerate up to 1 month.
Fresh Ginger Syrup (makes about 1 cup)
Combine 1 cup thinly sliced fresh ginger, 1 cup granulated sugar, and 1 cup water in a saucepan. Bring to a gentle simmer over medium heat and simmer for 10–15 minutes to extract ginger flavor, stirring occasionally.
Remove from heat, stir in 1 tablespoon fresh lemon juice, and let steep until cool or for at least 30 minutes for stronger flavor.
Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar, pressing on solids to extract liquid. Discard solids. Refrigerate syrup up to 2 weeks.
