Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice and water while you prepare the cocktail to chill it.

Combine base ingredients

In a cocktail shaker, add the gin (2 oz), ginger liqueur (0.5 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz), and apple cider (1 oz).

Add ice and bitters

Fill the shaker with ice (enough to come about three-quarters full) and add 2 dashes of Angostura bitters.

Shake

Secure the shaker and shake vigorously for 10–12 seconds until the shaker feels cold to the touch and the mixture is well-chilled and slightly diluted.

Prepare glass

If you chilled the glass with ice water, dump the ice water out. Add fresh ice cubes to the glass to about three-quarters full.

Strain and top

Double-strain the shaken cocktail into the prepared glass over fresh ice. Top gently with 2 oz ginger beer (or ginger ale) to preserve effervescence.

Garnish and serve

Express a lemon twist over the drink to release oils, rim the glass with it if desired, then drop the twist in. Float or skewer an apple slice on the rim as a garnish. Serve with a short stirring spoon for the guest to adjust carbonation balance.

If you prefer a spicier ginger profile, use a stronger ginger beer and reduce ginger liqueur to 0.25 oz. For a non-alcoholic version, replace gin and ginger liqueur with 2.5–3 oz apple cider and extra non-alcoholic ginger beer, keep lemon and simple syrup proportions, and proceed the same way.
