Prepare glass
Choose a large wine glass or an old-fashioned glass. Fill the glass generously with ice cubes so the glass is about three-quarters full — this keeps the drink cold and preserves the bubbles.
Add Aperol
Pour 3 tablespoons (about 1.5 oz) of Aperol over the ice. Swirl the glass gently to partially chill the Aperol and coat some of the ice.
Add Prosecco
Slowly pour 3 oz of well-chilled Prosecco into the glass. Pouring slowly helps preserve carbonation and avoids an overly foamy pour.
Top with soda
Add 2 oz of chilled Double Dutch soda (or tonic/soda water) on top. Pour gently down the side of the glass or over the back of a spoon to maintain effervescence and create a three-layered look.
Light stir
Give the drink one or two very gentle stirs with a bar spoon to integrate the Aperol, Prosecco, and soda without flattening the bubbles.
Garnish and serve
Garnish with a fresh orange wheel placed on the rim or floated in the glass. Serve immediately while chilled and fizzy.
