Method

Marinade

  1. 1

    Combine and marinate

In a bowl combine the lamb cubes with dairy-free yogurt, 2 tbs garlic paste, 1 tbs ginger paste, 1 tsp turmeric, 1 tsp ground cumin and 1.5 tsp salt. Mix thoroughly so all pieces are coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor penetration.

Spice mix & aromatics

  1. 2

    Prepare aromatics

Heat 4 tbs vegetable oil and 1 tbs mustard oil (if using) in a heavy-bottomed pan or Dutch oven over medium heat until shimmering. Add 2 bay leaves, 4 lightly crushed cardamom pods, 4 cloves and 1 cinnamon stick. Fry for 30–45 seconds until fragrant, taking care not to burn the spices.

  2. 3

    Brown the onions

Add 2 cups thinly sliced onions. Sauté on medium-low to medium heat, stirring frequently, for 10–15 minutes until they are deep golden brown. This step builds the bhuna's characteristic depth. If onions start to stick, add a splash of water (1–2 tbs).

  3. 4

    Add fresh aromatics

Stir in 1 tbs garlic (for cooking) and 1 tbs fresh ginger. Cook for 1–2 minutes until raw smell disappears. Add 2 slit green chilies and continue to cook for another 30 seconds.

  4. 5

    Incorporate tomato and spices

Pour in 400 g tomato puree. Cook the mixture on medium heat for 8–10 minutes, stirring occasionally, until the tomato reduces and oil begins to separate at the edges. Add 2 tsp ground coriander, 1 tsp ground cumin, 1 tsp red chili powder, 1 tsp garam masala, 1 tsp salt and 1 tsp sugar. Stir well and simmer 3–4 minutes to bloom the spices.

  5. 6

    Add the marinated lamb

Increase heat to medium-high. Add the marinated lamb pieces to the pan, scraping any yogurt marinade into the sauce. Stir continuously for 6–8 minutes to sear the meat and coat it with the masala (this bhuna technique helps concentrate flavors).

  6. 7

    Cook until tender

Reduce heat to low-medium, cover the pan partially, and let the lamb simmer gently for 45–60 minutes, stirring every 8–10 minutes. If the sauce becomes too dry before the lamb is tender, add 60–120 ml hot water in 2–3 tbs increments. Goal: tender lamb with a thick, well-coated masala. Cooking time depends on meat cut and size of cubes.

  7. 8

    Adjust seasoning and finish

When lamb is tender and sauce is thick, taste and adjust salt and chili. Stir in 1 tsp crushed kasuri methi (optional) and 1 tsp garam masala additional if desired. Sprinkle 0.25 cup chopped fresh cilantro and turn off heat. For extra heat/garnish add sliced green chili.

  8. 9

    Rest and serve

Let the bhuna rest for 5–10 minutes so flavors settle. Serve hot with lemon wedges on the side. This dish is gluten-free and dairy-free as written.

Optional finishing

  1. 10

For an authentic aroma, crush kasuri methi between your palms and sprinkle over the hot curry just before serving. Garnish with additional sliced green chilies if desired.
