Preparation and Distillation
1. Mashing the Barley
In a large pot, combine the high-quality barley with 2 liters of pure water. Heat the mixture to about 65°C (149°F) and maintain this temperature for 1 hour to allow the barley to release its sugars.
2. Cooling the Mash
Remove the pot from heat and allow the mash to cool to around 25°C (77°F). This is crucial for the fermentation process.
3. Fermentation Process
Once the mash has cooled, add the fresh yeast and stir gently. Cover the pot and let it sit at room temperature for 5-7 days, allowing the yeast to ferment the sugars into alcohol.
4. Filtration
After fermentation, strain the liquid through a fine mesh sieve to remove solid particles. Then, pass the liquid through charcoal to filter out impurities and enhance the flavor.
5. Distillation
Transfer the filtered liquid into a still and distill it at least twice to achieve a high purity level. Collect the distillate that comes out at around 78-80°C (172-176°F) as this will be your vodka.
6. Aging Process
For the final touch, add natural honey to the distillate and let it rest for a few weeks in a cool, dark place to allow the flavors to meld together.
7. Bottling
After aging, bottle the vodka in clean, sterilized bottles. Seal tightly and store in a cool place or refrigerate before serving.
