In a mixing bowl, combine all-purpose flour, cornstarch, salt, and water. Whisk together until you achieve a smooth batter.

Add the sliced ginger to the batter, ensuring each piece is well-coated.

Heat the vegetable oil in a deep pan over medium heat. Once the oil is hot, carefully drop in the coated ginger strips in batches. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Rinse the fresh mint leaves under cold water. Pat them dry with a paper towel.
