Method
Preparing the Prawns
Clean the Prawns
Rinse the jumbo tiger prawns under cold water to remove any debris. Use a knife to carefully devein each prawn by making a shallow cut along the back and removing the dark vein.
Cook the Prawns
Bring a pot of salted water to a boil. Add the cleaned prawns and boil for 2-3 minutes, or until they turn pink and opaque. Remove from heat and transfer to an ice bath to stop the cooking process. Drain and set aside.
Making the Nam Jim Mayo
Combine Ingredients
In a medium mixing bowl, combine the mayonnaise, fresh lime juice, fish sauce, chili paste, minced garlic, and chopped cilantro. Mix well until smooth and creamy.
Taste and Adjust
Taste the nam jim mayo and adjust seasoning if needed. You can add more lime juice for acidity or more chili paste for heat.
Preparing the Sriracha Cocktail Sauce
Mix the Sauce
In a small bowl, mix together the ketchup, sriracha sauce, fresh lemon juice, Worcestershire sauce, and a pinch of salt. Stir until well combined.
Taste and Adjust
Taste the cocktail sauce and adjust the sriracha for desired heat. You may also add more lemon juice for tanginess.
Serving the Shrimp Cocktail
Plate the Dish
Arrange the cooked jumbo tiger prawns on a serving platter or individual glasses. Serve with small bowls of both nam jim mayo and sriracha cocktail sauce on the side.
Garnish
Garnish with extra cilantro leaves and lime wedges for an added touch.
