Prepare Bulgur Wheat

In a bowl, soak the bulgur wheat in warm water for about 20 minutes until it softens. Drain any excess water and set aside.

Mix Vegetables

In a large mixing bowl, combine the chopped parsley, diced tomatoes, diced cucumber, chopped green onions, and chopped mint leaves.

Combine Ingredients

Add the softened bulgur wheat to the bowl with the vegetables. Mix well to combine all the ingredients.

Dress the Salad

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss gently to coat.

Chill and Serve

Cover the tabbouleh and let it chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
