Marinate the Chicken

In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper. Add the chicken breast pieces to the marinade, coating them evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Vegetables

While the chicken is marinating, prepare the bell peppers and red onion by cutting them into chunks. Set aside.

Assemble the Kabobs

Once the chicken has marinated, remove it from the refrigerator. Thread the marinated chicken pieces onto the skewers, alternating with chunks of bell peppers and red onion.

Cook the Kabobs

Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serve

Remove the kabobs from the grill and let them rest for a few minutes. Serve hot with your choice of dipping sauce or over rice.
