Potatoes & Basic Seasoning

Preheat and prepare potatoes

Preheat oven to 400°F (205°C). Scrub the russet potatoes thoroughly and pat dry. Pierce each potato 3–4 times with a fork to allow steam to escape.

Bake whole potatoes directly on the oven rack or on a baking sheet for 45–60 minutes, until skins are crisp and a fork inserts easily. Time will vary with potato size. Remove from oven and let cool until safe to handle (about 10 minutes).

Filling

Prepare filling base

While potatoes bake, combine softened cream cheese, 3 tablespoons butter (reserve 1 tbs for finishing), sour cream, 1 cup shredded cheddar, 2 tablespoons chopped chives, 2 tsp salt, and 1 tsp black pepper in a mixing bowl. Mix until smooth and homogenous; chill if needed to keep firm.

When potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the flesh into a bowl, leaving about a 1/4-inch shell so skins hold their shape. Reserve the scooped potato flesh.

To the reserved potato flesh, add the prepared filling base and mash together until creamy and well combined. Taste and adjust seasoning with additional salt or pepper as desired.

Protein (choose one)

Cook and prepare chosen protein

Select one protein option. If using sausage links or ground meats, cook in a skillet over medium heat until fully cooked and browned (about 6–8 minutes for ground; 8–10 minutes for links), breaking up larger pieces. If using ham or roasted turkey, dice or shred as needed. Drain any excess grease and fold 8 oz of the prepared protein into the potato-cheese mixture, reserving a small amount (about 2 tbsp) for topping if desired.

Mix protein thoroughly into the potato filling so it is evenly distributed.

Assemble & Bake

Fill potato skins

Spoon or pipe the stuffed potato mixture back into the reserved skins, mounding slightly. Place filled skins on a baking sheet lined with foil or parchment for easier cleanup.

Dot the tops with the remaining 1 tablespoon butter and sprinkle the reserved 1/2 cup shredded cheddar over each stuffed potato. Add reserved protein pieces on top if you saved any.

Bake at 400°F (205°C) for 12–15 minutes, until the tops are heated through and cheese is melted and lightly golden.

Topping & Finish

Remove from oven and let cool for 2–3 minutes. Garnish with remaining 1 tablespoon chopped chives. Sprinkle a light pinch (about 1/2 tsp total) of salt over skins if desired.

Serve hot. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F (175°C) oven for 10–12 minutes or until warmed through.
