Sweet Red Sauce (for BBQ / dipping)

Combine and simmer

In a medium saucepan combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, spicy chili sauce, smoked paprika, onion powder, garlic powder, salt, black pepper and water. Whisk until smooth.

Place saucepan over medium-low heat. Bring to a gentle simmer, stirring occasionally to prevent sticking. Simmer uncovered for 10–12 minutes until slightly thickened and flavors meld. If too thick, add up to 2 tablespoons water to adjust consistency.

Taste and adjust: add more vinegar for tang, more sugar for sweetness, or more chili sauce for heat. Cool slightly before transferring to containers. Sauce will thicken further as it cools.

Storage: refrigerate in airtight containers up to 2 weeks. Rewarm gently before serving for best mouthfeel.

Tangy White Sauce (creamy, tang-forward)

Whisk together base

In a medium bowl combine mayonnaise and Greek yogurt (or sour cream). Whisk until smooth and homogenous.

Add apple cider vinegar, lemon juice, honey, minced garlic, onion powder, and dill. Whisk to incorporate fully.

Season with salt and black pepper, taste and adjust: add an extra 1/2 tablespoon vinegar for more tang, or 1/2 teaspoon honey if too tart.

Chill: cover and refrigerate at least 1 hour (preferably 4 hours) to allow flavors to marry. Keeps in refrigerator up to 7 days.

Mild Vinegar Sauce (light, tangy, thin)

Heat and dissolve

In a small saucepan combine apple cider vinegar, water, sugar, salt, crushed red pepper flakes, celery seed and black pepper. Whisk until sugar and salt are mostly dissolved.

Bring to a gentle simmer over medium heat for 2–3 minutes to fully dissolve sugar and bloom the spices. Remove from heat and let cool to room temperature to allow flavors to infuse.

Taste and adjust: add more sugar for balance, or up to 1 tablespoon more water if too strong. Transfer to bottles or jars. Keeps refrigerated up to 1 month; shake well before using as solids may settle.

Hot Sauce (spicy finishing sauce)

Warm and emulsify

In a small saucepan melt the unsalted butter over low heat. Add hot pepper sauce, apple cider vinegar, honey, garlic powder and salt. Whisk continuously until butter is fully incorporated and the mixture is smooth.

Bring to a bare simmer for 1 minute then remove from heat. Taste and adjust heat/sweetness: add extra honey for balance or an extra tablespoon vinegar for tang.

Cool slightly and transfer to a squeeze bottle or container. Store refrigerated up to 2 weeks. Rewarm gently before using to return to pourable consistency.
