Prep the Chicken

Pat the leg quarter dry with paper towels. Optionally trim excess loose skin or fat, leaving the skin intact over the meat. Using a small paring knife, make 2–3 shallow slits in the thickest part of the thigh to help seasoning penetrate and to encourage even cooking.

Make the Rub

In a small bowl combine kosher salt, black pepper, paprika, brown sugar, garlic powder, onion powder, dried thyme and cayenne (if using). Mix thoroughly so the sugar and spices are evenly distributed.

Apply Oil and Rub

Brush the chicken lightly with about 0.5 tablespoon olive oil per pound to help the rub adhere. Rub the spice mix all over the skin and into the slits, coating the underside and the joint area. Allow the rubbed chicken to rest at room temperature for 20–30 minutes, or refrigerate uncovered up to 4 hours for a drier skin (if refrigerated, bring back to room temperature 30 minutes before smoking).

Prepare the Smoker

Preheat your smoker to 250°F (120–125°C). If using a grill for indirect smoking, set up for indirect heat and aim for the same temperature range. Add about 1/4 cup of wood chips or an appropriate chunk for smoking to generate a steady, mild smoke. Place a drip pan with a couple of tablespoons of apple juice or cider beneath the cooking grate to catch drips and add moisture to the environment.

Smoke the Chicken

Place the leg quarter skin-side up on the smoker grate away from direct heat. Close the lid and smoke at 250°F until the internal temperature reaches 155–160°F (68–71°C) in the thickest part of the thigh, approximately 60–90 minutes depending on size and smoker consistency. Every 25–30 minutes, lightly mist or brush the chicken with apple juice (about 2 tablespoons total used in increments) to maintain moisture and promote a glossy skin.

Raise Heat for Crisping (optional)

If you prefer crisper skin, increase the smoker or grill temperature to 375–425°F (190–220°C) for the final 8–12 minutes, watching closely to avoid flare-ups, until skin is browned and the thickest part of the thigh registers 165°F (74°C).

Rest and Serve

Remove the leg quarter from the smoker when the internal temperature reaches 165°F (74°C). Tent loosely with foil and rest for 8–10 minutes so juices redistribute. Serve per pound as a smoked leg quarter with the seasoned rub. Discard any drippings that contacted raw meat and serve alongside your preferred sides.
