Combine and simmer

In a small saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Whisk until smooth.

Place saucepan over medium-low heat and bring to a gentle simmer, stirring occasionally. Reduce heat to low and simmer 8–10 minutes until slightly thickened and glossy. Taste and adjust seasoning (add more vinegar for tang, sugar for sweetness).

Remove from heat and let cool 10 minutes. Transfer to a bottle or jar; sauce will thicken more as it cools. Yields about 1 cup.

Whisk dressing

In a bowl, combine mayonnaise, plain yogurt, lemon juice, Dijon mustard, honey, and minced garlic. Whisk until smooth and homogenous.

Season with salt and black pepper, tasting and adjusting acidity with additional lemon juice if needed. If too thick for a bottle, thin with 1–2 tsp water or more yogurt until pourable.

Transfer to a squeeze bottle or jar and refrigerate at least 30 minutes to let flavors meld. Yields about 1 cup.

Make quick pickling/vinaigrette base

In a small heatproof bowl, combine rice vinegar, water, sugar, and salt. Stir to dissolve sugar and salt.

Warm the mixture briefly in the microwave (15–20 seconds) or in a small saucepan over low heat just until sugar dissolves; do not boil. Stir in crushed red pepper if using.

Let cool to room temperature, then transfer to a bottle. Refrigerate — this keeps well for 2–3 weeks. Yields about 3/4 cup.

Blend hot sauce base

In a small bowl, whisk together hot sauce, melted butter, honey, lime juice, garlic powder, and salt until smooth and emulsified.

Taste and adjust balance: add more honey for sweetness, more lime for brightness, or more hot sauce for heat. If thicker texture is desired, warm gently for 30 seconds and whisk to incorporate.

Pour into a heat-safe bottle or jar and store refrigerated. Yields about 1/3 cup.
