Preheat and prepare
Preheat the oven to 220°C (425°F). Line two baking sheets with parchment paper or lightly oil them to prevent sticking. If you have a convection setting, use it to improve crisping.
Peel and cut
Wash and peel the sweet potatoes. Cut into uniform fries about 1/3 to 1/2 inch thick and roughly 3 inches long. Aim for consistent size so they cook evenly. Place cut fries in a large bowl of cold water as you work to remove excess starch.
Soak
Soak the cut fries in the cold water for at least 30 minutes (up to 2 hours). This removes surface starch and helps the fries crisp in the oven.
Dry thoroughly
Drain the fries and dry them completely using clean kitchen towels or paper towels. Removing moisture is essential for crisping.
Coat with cornstarch and oil
Return the dried fries to a dry bowl. Sprinkle the cornstarch evenly over the fries and toss to coat lightly. Add the olive oil and toss until the fries are evenly coated.
Season
In a small bowl, combine smoked paprika, garlic powder, sea salt, black pepper, and optional ground cumin. Sprinkle the spice mix over the oiled fries and toss until evenly distributed.
Arrange on baking sheets
Spread the fries in a single layer on the prepared baking sheets, making sure fries are not overcrowded or touching too much. Use two sheets if needed so air can circulate around each fry.
Bake and flip
Bake in the preheated oven for 20 minutes. Remove the sheets and use a spatula to flip each fry so the other side can brown. Rotate the sheets between racks if using both. Return to the oven and bake for an additional 10–15 minutes until edges are brown and fries are tender. Total bake time will be about 30–35 minutes depending on thickness and oven.
Broil for extra crisp (optional)
If you want extra crispness, switch oven to broil for 1–2 minutes at the end—watch carefully to avoid burning.
Finish and garnish
Remove fries from the oven and immediately sprinkle with chopped parsley and grated Parmesan if using. Taste and add a little more salt if needed.
