Measure and combine

In a mixing glass or small pitcher, pour 4 tablespoons (about 60 ml) of Pimm's No. 3 and 60 ml of London dry gin. Stir gently to combine the fortified wine-laced liqueur with the gin.

Mixer and Citrus

Add citrus

Add 30 ml fresh lemon juice to the Pimm's/g in mixture and stir briefly to incorporate.

Top with tonic

Pour about 150 ml chilled elderflower tonic (or chilled soda water with a small splash of elderflower cordial) into the pitcher and stir gently to blend. Adjust tonic amount to taste depending on desired strength.

Garnish and Assembly

Prepare glass

Fill a tall Collins or highball glass with a generous amount of ice.

Add fruit and herbs

Place 3 thin cucumber slices, 3 halved strawberries, 6 fresh mint leaves and a lemon wheel into the glass — some can be dropped into the liquid and some used as a rim garnish.

Combine and serve

Strain or pour the Pimm's mixture over the ice and garnishes. Give the glass one gentle stir to lift aromatics. Taste and adjust — add more tonic or a squeeze of lemon if you prefer brighter acidity.

Garnish with an additional mint sprig or cucumber ribbon if desired and serve immediately with a straw.
