Prepare fresh vegetables

Wash all fresh vegetables. Trim baby carrots, halve radishes, slice cucumber into 1/4-inch rounds and arrange grape tomatoes in a small pile on the platter.

Place hummus, tzatziki, and babaganoush into small bowls (3–4 ounces each). Smooth the tops with the back of a spoon and drizzle a little olive oil (about 1 tsp per bowl) over the hummus and sprinkle a pinch of za'atar if using.

Put marinated feta into a small bowl and spoon a little of its marinade or 1–2 teaspoons of olive oil on top. Place mixed olives in a separate small bowl. Add pickled vegetables to a tiny dish.

Cheese & Meat

Fold prosciutto or arrange salami slices into loose rosettes or stacks so they are easy to pick up. Fan the sliced manchego or cheddar on the platter.

Scatter crumbled goat cheese in a small mound or spoon into a mini bowl if you prefer containment.

Warm pita briefly in a 350°F (175°C) oven for 3–5 minutes or heat in a dry skillet until pliable; cut into triangles and arrange near the dips.

Place toasted pita chips or crostini in a small pile. Spoon roasted almonds or spiced nuts into a small bowl or scatter around the platter for texture.

Garnish & Assembly

Select a large shallow platter or wooden board. Position the bowls of hummus, tzatziki, babaganoush, marinated feta, olives and pickles spaced across the board so they create focal points.

Fill in gaps with the fresh vegetables (carrots, cucumbers, radishes, tomatoes), arranged in small clusters for color contrast.

Arrange meats and cheeses between the dips and vegetables to create balance and make it easy for guests to reach a variety from any side.

Tuck pita triangles, pita chips, and crostini into open spaces. Scatter roasted nuts and a few mint leaves around the board.

Drizzle remaining olive oil (about 1–2 tablespoons) lightly over open items such as tomatoes and cheeses. Sprinkle chopped parsley, sea salt and ground black pepper across the platter, and garnish with lemon wedges for squeezing.

Serve immediately at cool room temperature (dips chilled, other items removed from fridge 10–15 minutes beforehand). Provide small spoons for dips and toothpicks for olives and pickles.
