Brewing Process
1. Prepare the Mash
In a large mash tun, heat 5 gallons of water to 165°F (74°C). Add the pale malt and caramel malt to the water, stirring to combine. Maintain the temperature at 150°F (65°C) for 60 minutes.
2. Sparging
After the mash is complete, sparge the grains with additional hot water to extract the sugars. Collect the wort in your brew kettle.
3. Boiling the Wort
Bring the wort to a boil. Once boiling, add the Citra hops and boil for 60 minutes, adding Simcoe hops at the 15-minute mark and Amarillo hops at the 5-minute mark.
4. Cooling the Wort
After the boil, quickly cool the wort using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and allow it to ferment for 1-2 weeks at room temperature.
6. Bottling
Once fermentation is complete, prepare your bottles and priming sugar. Bottle the beer, seal, and allow it to carbonate for another 1-2 weeks.
7. Enjoy
Chill your beer and enjoy your homemade IPA, reminiscent of the California craft beer scene!
