Brewing Process

1. Mashing

In a large mash tun, combine the crushed pale malt, crystal malt, and carapils malt with 5 gallons of hot water at 155°F. Let it rest for 60 minutes.

2. Sparging

After mashing, sparge the grains with hot water until you collect about 6.5 gallons of wort.

3. Boiling

Bring the wort to a boil and add the Cascade hops. Boil for 60 minutes, adding Centennial hops in the last 15 minutes.

4. Cooling

Cool the wort quickly using a wort chiller to about 70°F.

5. Fermentation

Transfer the cooled wort to a fermenter and pitch the American Ale yeast. Seal and let ferment for about 2 weeks at 68°F.

6. Bottling

After fermentation is complete, bottle the beer with a priming sugar solution to carbonate.

7. Aging

Let the bottles condition at room temperature for 2 weeks before chilling and serving.
