Prep Crab

    Rinse and pat dry the soft-shell crabs. Remove gills and spines if not already removed and score the underside lightly to keep them flat when frying.

    Rub each crab with lemon juice, then season both sides with salt and freshly ground black pepper. Let rest 10 minutes while preparing batter.

Make Batter & Coat

    In a bowl, whisk together all-purpose flour, cornstarch and baking powder. In a separate small bowl, beat the egg and combine with cold sparkling water. Add the wet ingredients to the dry and whisk to a smooth, slightly thick batter; it should coat a spoon but remain airy. If too thick, add 1 teaspoon cold water.

    Set rice flour on a plate for a dry dusting. Lightly dust each seasoned crab with rice flour, shaking off excess, then dip fully into the batter, making sure claws and edges are well coated. Allow excess batter to drip for 20–30 seconds.

Fry Crab

    Heat oil in a deep skillet or fryer to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter— it should sizzle and rise immediately.

    Fry the crabs in batches (do not overcrowd) for 3–4 minutes per side until golden brown and crispy. Use tongs to gently flip. Internal temperature should be opaque and firm. Remove to a wire rack or paper towel-lined tray to drain and sprinkle with a little finishing salt.

Make Butter Garlic Curry Leaf Sauce

    In a large skillet or sauté pan over medium heat, melt 4 tablespoons of the butter. Add the minced garlic and sauté for 30–45 seconds until fragrant but not browned.

    Add the fresh curry leaves and slit green chilies and fry for 45–60 seconds; the leaves will crisp and aroma will release. If the pan is too hot and garlic begins to brown, reduce heat.

    Stir in soy sauce, fish sauce, light brown sugar, water and remaining 2 tablespoons butter. Simmer gently for 1–2 minutes until the butter emulsifies and the sauce becomes glossy. Taste and adjust seasoning with lime juice and additional salt or sugar as needed.

    If using, stir in crispy fried garlic and chopped cilantro off the heat to preserve their texture.

Toss & Serve

    Place the fried crabs in the skillet with the butter garlic curry leaf sauce and gently toss (or spoon the sauce over the crabs) to coat thoroughly. Do this over low heat for 30 seconds to 1 minute so the crabs absorb the flavors without becoming soggy.

    Transfer to a serving platter, garnish with extra curry leaves, a sprinkle of chopped cilantro and an extra squeeze of lime if desired. Serve immediately as an appetizer.
