Prepare the Beef

Pat the beef chuck roast dry with paper towels. Season generously with salt and black pepper on all sides.

Chop Vegetables

Chop the onions, carrots, and celery into bite-sized pieces. Mince the garlic cloves.

Cooking

Sear the Beef

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the seasoned beef and sear until browned on all sides, about 3-4 minutes per side. Remove the beef from the pot and set aside.

Sauté the Vegetables

In the same pot, add the onions, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Deglaze the Pot

Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let it cook for about 3 minutes.

Add Liquids and Seasonings

Add the beef broth, soy sauce, bay leaves, and thyme to the pot. Stir to combine.

Braise the Beef

Return the seared beef to the pot. Bring the liquid to a gentle simmer, cover, and reduce the heat to low. Let it braise for 2.5 to 3 hours until the beef is tender and easily shredded with a fork.

Serve

Remove the beef from the pot and let it rest for a few minutes before slicing. Serve the beef with the sauce and vegetables over mashed potatoes or with crusty bread.
