Prepare crust

Preheat oven to 350°F (175°C). In a medium bowl combine graham cracker crumbs, dark brown sugar, and salt. Stir in melted butter until mixture is evenly moistened and holds together when pressed.

Press crust into pan: Transfer crumb mixture to a 9-inch (23 cm) pie dish. Using the back of a measuring cup or your fingers, press crumbs firmly and evenly across the bottom and slightly up the sides to form a compact crust (about 1/4-1/2 inch thick).

Bake crust: Bake for 8–10 minutes until set and fragrant. Remove from oven and allow to cool slightly (5–10 minutes). Reduce oven temperature to 325°F (163°C) if you will reheat for finishing sucre.

Brown sugar sucre topping (optional)

Mix the granulated sugar and brown sugar for the sucre. Sprinkle evenly over the baked and slightly cooled crust. To caramelize, either return to a 325°F oven for 4–6 minutes until sugars melt and bubble, or use a culinary torch to melt and lightly caramelize the sugar for a crisp, dry sucre layer. Let cool completely while preparing curd.

Key Lime Curd Filling

Warm and temper: In a medium heatproof mixing bowl whisk together the egg yolks until smooth. Add the sweetened condensed milk and whisk until fully combined. Stir in the Key lime juice and grated lime zest and the pinch of salt.

Cook gently (stovetop method): Pour the mixture into a medium heavy-bottomed saucepan. Cook over low to medium-low heat, stirring constantly with a silicone spatula and scraping the bottom, until the mixture thickens slightly and reaches about 170–175°F (77–79°C). This will take about 6–10 minutes; do not let it boil or the eggs may scramble. The curd should coat the back of a spoon.

Finish with butter: Remove from heat and whisk in the butter pieces, one at a time, until fully incorporated and the curd is glossy and smooth. If desired, strain the curd through a fine-mesh sieve into a bowl to remove any cooked egg bits and the zest for an ultra-smooth texture.

Assemble: Pour the warm (not piping hot) curd into the prepared crust, smoothing the top with an offset spatula. Tap the pie gently on the counter to remove air bubbles.

Chill: Cover loosely with plastic wrap (touching the curd will cause condensation, so tent if possible) and refrigerate until fully set, at least 4 hours and up to overnight. The curd will firm as it chills.

Vanilla Chantilly (whipped cream)

Chill equipment: Place a mixing bowl and whisk or beaters in the refrigerator or freezer for 10–15 minutes to chill — cold equipment helps the cream whip faster and hold better.

If using cream cheese for stability: Soften the cream cheese slightly by beating it until smooth in the chilled bowl. If not using, skip this step.

Whip cream: Add chilled heavy cream, confectioners' sugar, and vanilla extract to the bowl (and the smoothed cream cheese if using). Whip on medium-high speed until soft peaks form, about 2–4 minutes. Taste and adjust sweetness if needed. Do not overwhip.

Pipe or spread: When the pie curd is fully set, either spread the vanilla chantilly evenly over the top or transfer to a piping bag fitted with your chosen tip and pipe decorative rosettes or borders.

Finishing & Serving

Garnish: Sprinkle the finely grated lime zest over the top of the chantilly and arrange thin lime slices or wheels if desired. For an elegant touch, lightly torch the lime slices briefly to release oils (optional).

Serve: Keep refrigerated until ready to serve. Slice with a hot, clean knife (dip in warm water and wipe between cuts) to get clean slices. Serve chilled. Leftovers will keep covered in the refrigerator for up to 3 days.
