Tools & Serving
Method
Caviar
Chill and prepare
Remove the 30 g jar of Kaluga caviar from refrigeration and keep it chilled until serving. If the caviar has been transported, rest it in the refrigerator for at least 30 minutes to bring it to a serving temperature of about 2–6°C (36–43°F).
Accompaniments
Prepare blini/crispbreads
If using blini, warm them briefly (10–15 seconds) in a low oven (80–100°C / 175–210°F) or on a warm pan — they should be barely warm, not hot. If using crispbreads, keep them at room temperature and do not heat.
Butter or crème fraîche base
Lightly spread 1 tsp softened unsalted butter on each blin or smear a small dollop of crème fraîche (about 1/2 tsp) onto each crispbread to create a neutral, slightly fatty base that highlights the caviar. Place approximately 3–5 g of caviar (a small spoonful) on top of each prepared blin/crispbread.
Serving
Arrange the chilled caviar bowl or plate centrally on the serving dish with the prepared blini or crispbreads around it. Keep additional crème fraîche, minced shallot, and chives in small bowls for guests to add as desired.
Advise guests to use the non-reactive spoon to transfer caviar onto a blin or crispbread (do not use metal), and eat in one or two bites to appreciate texture and flavor. Keep leftover caviar tightly covered with plastic wrap and refrigerated; consume within 24–48 hours for best quality.
