Method

Prep dry ingredients

Sift together almond flour and powdered sugar into a large bowl twice to remove any lumps and ensure a fine texture. Set aside.

Make meringue

In a clean, dry mixing bowl, whisk egg whites until foamy. Add cream of tartar. Gradually add granulated sugar while whipping to medium-stiff glossy peaks (about 4–6 minutes with an electric mixer).

Macaronage

Fold one-third of the sifted dry mix into the meringue to loosen, then gently fold in the rest with a spatula using a figure-8 motion. When batter flows like lava and you can make a ribbon that dissolves in ~10 seconds, stop. If using color, add a few drops during folding until evenly tinted.

Pipe shells

Transfer batter to a pastry bag fitted with a round tip (or cut the tip). Pipe 1.5-inch rounds on a baking sheet lined with parchment or silicone mat, spacing about 1 inch apart. Tap the sheet firmly against the counter 2–3 times to release air bubbles. Use a toothpick to pop any visible bubbles.

Dry shells

Let piped shells sit at room temperature for 30–60 minutes (longer in humid conditions) until a thin skin forms and they are no longer sticky to the touch.

Bake

Preheat oven to 300°F (150°C). Bake one sheet at a time for 12–15 minutes until shells rise and develop 'feet.' Rotate the sheet halfway through for even baking. Let cool completely on the tray.

Assemble

Pair shells by size. Pipe or spoon about 1 teaspoon of prepared ganache or buttercream onto the flat side of one shell and sandwich. Press gently. Refrigerate in an airtight container for 24 hours to mature, then bring to room temperature before serving.

Madeleines (about 18 small madeleines)

Prepare pan and dry ingredients

Preheat oven to 375°F (190°C). Lightly brush madeleine molds with melted butter and dust with flour, tapping out excess. Whisk together flour and baking powder and set aside.

Whisk eggs and sugar

In a bowl, whisk eggs and granulated sugar vigorously (or use a mixer) until pale, thick and ribbon-like, about 5 minutes. Add lemon zest and vanilla extract and mix to combine.

Fold in flour and butter

Gently fold the dry ingredients into the egg mixture in two additions until just combined. Fold in the melted butter slowly until smooth. Chill batter in the refrigerator for 15–30 minutes—this helps achieve the hump.

Bake

Spoon or pipe batter into prepared molds (fill about 3/4 full). Bake for 9–12 minutes until edges are golden and centers spring back. Remove from oven and unmold onto a cooling rack.

Finish

When cool, dust with powdered sugar. Store in an airtight container for up to 2 days or freeze.

Cannelés (about 12 small cannelés)

Infuse milk

In a saucepan, combine whole milk, butter and split vanilla bean (scrape seeds into milk and add pod). Bring just to a simmer, then remove from heat and let infuse for 15–20 minutes. Remove vanilla pod.

Mix dry & wet

Whisk together flour, sugar and salt in a bowl. In a separate bowl whisk the eggs (whole egg plus yolks) lightly. Gradually whisk the warm milk into the eggs, then pour the combined liquid into the dry ingredients and whisk until smooth. Stir in dark rum.

Rest batter

Cover the batter and refrigerate at least 24 hours (up to 48 hours)—this improves texture and flavor.

Prepare molds & bake

Preheat oven to 450°F (230°C). Brush molds with beeswax or softened butter and place on a baking sheet. Fill molds almost to the top with batter. Bake at 450°F (230°C) for 10–15 minutes, then reduce oven temperature to 375°F (190°C) and continue baking 40–50 minutes until deep mahogany and caramelized. Time varies with mold size—watch color closely.

Cool & unmold

Remove cannelés from oven, unmold immediately onto a rack to cool. Cannelés develop best flavor and texture after a few hours at room temperature; serve slightly warm or room temp.

Lemon Poppyseed Loaf (1 small loaf, 8–10 slices)

Preheat & mix dry

Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan. Whisk together flour, baking powder and salt in a bowl.

Cream butter and sugar

In a separate bowl, cream softened butter and granulated sugar until light and fluffy (about 3 minutes). Add eggs one at a time, beating until incorporated.

Combine wet & dry

Stir in lemon zest, lemon juice and milk. Add dry ingredients and fold until just combined. Fold in poppy seeds.

Bake

Pour batter into prepared loaf pan and smooth top. Bake 45–55 minutes until a toothpick inserted into center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 30–35 minutes.

Glaze & cool

While loaf cools for 10 minutes, whisk powdered sugar with a little lemon juice to make a pourable glaze. Remove loaf from pan, drizzle glaze over warm loaf and allow to set. Cool completely before slicing.

Pâte de Fruits (about 30 small cubes)

Prepare purée

If using fresh fruit, purée and strain to remove seeds. Measure 2 cups of smooth puree. Combine puree with lemon juice and 1 cup of granulated sugar in a heavy-bottomed saucepan.

Heat with pectin

In a small bowl, mix pectin with the remaining 1 cup sugar to prevent clumping. Bring fruit-sugar mixture to a simmer over medium heat, stirring. Stir in the pectin-sugar mixture and continue to boil gently, stirring frequently to avoid scorching.

Cook to set point

Cook until the mixture reaches 105°C (221°F) on a candy thermometer or until it thickens significantly and pulls away from the sides (about 6–12 minutes depending on fruit). To test, place a small spoonful on a chilled plate — it should set into a soft gel.

Mold and set

Pour hot mixture into a lightly oiled or silicone-lined square pan to a depth of about 1/2 inch. Smooth top and let cool at room temperature until fully set (several hours or overnight).

Finish

Turn set pâte onto a cutting board. Cut into ~1-inch cubes and toss in extra granulated sugar to coat. Store in an airtight container separated by parchment layers for up to 2 weeks.
