Method

Lavazza Coffee (Fresh Brew)

Grind 0.33 cup (about 55–60 g) Lavazza whole beans to a medium grind suitable for drip or pour‑over. Heat 10 cups (2.4 L) filtered water to 195–205°F (90–96°C). Brew using your preferred method (drip, pour‑over, or French press) at a standard coffee:water ratio of about 1:18. For a single serving in the included mug, use 1–2 tablespoons coffee per 6 fl oz (180 ml) water.

Prepare beurre noisette

In a small saucepan, melt 0.75 cups unsalted butter over medium heat. Swirl frequently until milk solids brown lightly and you smell a nutty (noisette) aroma, about 4–6 minutes. Remove from heat and strain into a heatproof bowl. Let cool to warm (not hot).

Make batter

Preheat oven to 400°F (200°C). Lightly grease 12 small financier molds or a mini muffin pan with vegetable oil or softened butter. In a bowl whisk together 1 cup almond flour, 0.25 cup all‑purpose flour, 0.75 cup powdered sugar and 0.125 tsp salt until homogenous. In a separate bowl gently whisk the 4 egg whites until slightly frothy (do not form peaks). Fold egg whites into dry ingredients until just combined, then add 1 tsp vanilla and the cooled browned butter. The batter should be smooth and fairly liquid.

Bake

Fill molds about 3/4 full. Bake at 400°F (200°C) for 12–15 minutes until edges are golden and centers spring back. Let cool in pan 5 minutes, then unmold onto a rack to cool completely.

Infuse milk

In a saucepan, combine 1 cup whole milk, 2 tbsp unsalted butter, and the split vanilla bean (scrape seeds into milk and add pod). Heat until just simmering then remove from heat. Let steep 15–30 minutes for full vanilla flavor. Remove vanilla pod and bring milk back to a gentle warm temperature before mixing.

Make batter and rest

Whisk together 0.5 cup granulated sugar, 0.25 cup all‑purpose flour, and 0.125 tsp salt in a bowl. In another bowl whisk the 2 egg yolks lightly. Slowly pour the warm milk into the eggs, whisking constantly to temper. Add 1 tbsp dark rum (optional). Strain batter through a fine sieve into a container. Refrigerate uncovered or covered for at least 6 hours or overnight — this rest is traditional to develop texture.

Bake to caramelize

Preheat oven to 450°F (230°C). Brush cannelé molds liberally with melted butter or beeswax. Stir batter, fill molds nearly to the top, then immediately reduce oven temperature to 375°F (190°C) and bake for 40–50 minutes for small molds (longer for larger molds) until deeply caramelized on the outside and custardy inside. Let cool in molds 10 minutes, then unmold. Cool on a rack.

Flourless Raspberry Cake

Prep and melt chocolate

Preheat oven to 350°F (175°C). Butter and line the bottom of a 6‑ or 7‑inch springform pan with parchment. In a heatproof bowl set over (or above) simmering water, combine 7 oz chopped chocolate and 0.5 cup unsalted butter. Stir occasionally until melted and smooth. Remove from heat and let cool slightly.

Combine and fold

Whisk 0.75 cup granulated sugar into the warm chocolate mixture until dissolved. Add 4 whole eggs one at a time, whisking each until incorporated. Stir in 1 tsp vanilla and 0.125 tsp salt. Fold in about 1 cup raspberries gently — if using frozen, thaw and drain excess liquid and fold carefully to avoid coloring the batter too much.

Bake and finish

Pour batter into prepared springform pan and smooth top. Bake 25–30 minutes until the edges are set and the center still slightly jiggly. Remove from oven and let cool to room temperature, then chill at least 1 hour to set. Run a thin knife around the edge, remove the ring, and dust with 1 tsp confectioners' sugar and garnish with a few fresh raspberries before serving.

Vanilla Bean Sugar

Combine 1 cup granulated sugar with the scraped seeds from 1 vanilla bean in an airtight jar. Stir or shake to distribute the seeds. If using vanilla extract instead, add 1 tsp extract to the sugar and allow to rest in a sealed container for 24 hours to let the flavor meld. Store in a cool, dry place up to several months. Use to rim the mug, sweeten coffee, or in baking.

Box Assembly and Serving

When items are fully cooled and packaged, place the branded mug, a small jar of vanilla bean sugar, the bag of freshly roasted Lavazza (or pre‑measured pouch), and the baked goods (financiers, cannelés, and a slice or whole chilled flourless raspberry cake) into the gift box with tissue. For best enjoyment, include simple brewing instructions: 1–2 tbsp Lavazza per 6 fl oz (180 ml) water; brew to personal taste. Serve the cake chilled and the financiers and cannelés at room temperature alongside a freshly brewed cup of coffee.
