Chill glass

Place a rocks glass in the freezer or fill it with ice water while preparing the cocktail to chill briefly. Discard ice water before serving.

Combine ingredients

In a mixing glass, add 2 oz rye whiskey, 0.5 oz Cointreau, 0.5 oz fresh orange juice, 0.25 oz fresh lemon juice, 0.25 oz demerara or simple syrup, and 2 dashes Angostura bitters.

Ice and stir

Fill the mixing glass with plenty of ice and stir gently for 20–30 seconds until well-chilled and slightly diluted (mixing glass should be frosty on the outside).

Prepare glass

Discard the chilling ice/water from the rocks glass. Place one large clear ice cube into the chilled rocks glass.

Strain

Double-strain the chilled cocktail into the rocks glass over the large ice cube using a Hawthorne and fine mesh strainer (or just a Hawthorne if you don't have a fine strainer).

Garnish

Express an orange twist over the surface by holding the peel about 1–2 inches above the drink and giving it a firm squeeze to release oils, then rub the peel around the rim and place it on the ice as a garnish.

Caramelize

Sprinkle 1 tsp brown sugar over the surface of the cocktail, sitting on the large ice cube. Use a small kitchen torch to gently caramelize the sugar until it forms a thin brittle layer. Move the flame continuously to avoid burning; this creates a warm caramel note on top.

Flame aroma (optional — use caution)

If desired and safe, pour 0.25 oz high-proof rum into a metal spoon and hold it above the drink. Light the rum briefly with a long lighter to create a small blue flame for 1–2 seconds, then extinguish and quickly pour the rum over the caramelized surface. Alternatively, carefully tip the flame out and pass the lit cigar quickly above the drink (do not drop ash into the cocktail). Always keep a fire extinguisher nearby and do not attempt flaming if you are inexperienced.

Cigar aroma (optional)

For a theatrical finish, light the optional cigar and hold it near (but not touching) the glass so gentle smoke drifts over the cocktail for a few seconds, infusing an ephemeral tobacco aroma. Do not inhale smoke into the drink; this is purely aromatic.

Serve

Serve immediately while the caramel is warm and aromatic. Advise guests that the drink contains a brûléed sugar top and optional flamed spirit.
