Preheat and prepare pan

Preheat the oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat. This prevents sticking and makes cleanup easier.

Make spice blend

In a small bowl, combine smoked paprika, sweet paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, kosher salt, and freshly ground black pepper. Stir to evenly mix the spices.

Prepare coating syrup

In a small saucepan or microwave-safe bowl, gently warm the unsalted butter, vegetable oil, light brown sugar, and light corn syrup (or honey) just until the butter melts and the sugar dissolves — about 30–45 seconds in the microwave or 1–2 minutes on low heat on the stove. Remove from heat and stir in the hot sauce and the teaspoon of water to slightly thin the mixture so it coats nuts evenly.

Coat nuts

Place the mixed nuts in a large mixing bowl. Pour the warm butter-sugar-hot sauce mixture over the nuts and use a spatula to toss until all nuts are evenly coated. Immediately sprinkle the dry spice blend over the coated nuts and toss again to distribute spices thoroughly.

Spread and roast

Spread the coated, spiced nuts in a single even layer on the prepared baking sheet (try to avoid large clumps so they roast evenly). Roast in the preheated oven for 18–22 minutes, stirring and turning the nuts once halfway through (at ~10 minutes) to promote even browning. Watch carefully the last 5 minutes to prevent burning; nuts will smell fragrant and be golden when done.

Finish and cool

Remove the pan from the oven and immediately, while nuts are still warm and slightly tacky, sprinkle on the optional cayenne flakes and coarse sea salt if using. Use a spatula to separate any nuts that are stuck together. Transfer nuts to a cooling rack or another parchment-lined pan and let cool completely — about 30–45 minutes. As they cool the coating will crisp up.

Once cool, taste and adjust seasoning: add a pinch more kosher salt if needed or a squeeze of lemon over the nuts for brightness if using the lemon wedge. Toss in chopped fresh parsley if you want a fresh herbal note.

Store cooled nuts in an airtight container at room temperature for up to 2 weeks. For best texture, consume within 5–7 days. Serve in small bowls as a bar bite or snack alongside cocktails.
