Method

Infusion and simple syrup

Prepare sugar syrup

Combine the dark brown sugar, granulated sugar, and filtered water in a small saucepan. Warm over medium-low heat, stirring until sugars fully dissolve. Do not boil. Remove from heat and let cool to warm (about 10 minutes).

Toast and grind aromatics (optional)

Lightly toast the cinnamon stick, star anise, cloves, and gentian root in a dry skillet over medium heat for 1–2 minutes until fragrant — be careful not to burn. Let cool, then coarsely crush or grind them so they release more flavor during infusion.

Maceration (flavor extraction)

In a clean 1‑liter (or larger) glass jar, combine the neutral spirit, toasted and crushed spices (cinnamon, star anise, cloves, gentian root), toasted coffee beans (if using), dried bitter orange peel, sweet orange peel, dried lemon peel, fresh orange zest, split vanilla bean (or vanilla extract), and caramel color (if using).

Pour the warm (not hot) sugar syrup over the botanicals and spirit. The warmth helps to extract flavors but avoids cooking volatile aromatics. Stir gently to combine and make sure peels are submerged.

Seal the jar tightly and store in a cool, dark place. Let the mixture macerate for 7–14 days, shaking the jar gently once per day to redistribute flavors. Taste every 2–3 days after day 7 to judge development; flavors should be bittersweet, herbal, with warm spice and orange notes.

Finishing and clarification

When the infusion reaches the desired balance, strain the liquid through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean container to remove solids. Press the solids gently to extract remaining liquid, then discard solids.

If you used whole vanilla bean, split and scrape seeds into the infusion before final filtration, then strain again to remove pod fragments.

Optional: For a clearer liqueur, refrigerate the strained liquid for 24–48 hours so small solids drop out, then filter again through a coffee filter. Alternatively, cold-filter with a paper filter a second time.

Taste and adjust sweetness or strength: if too strong, add a little filtered water (tsp by tsp) to reach desired ABV and balance. If you prefer sweeter, dissolve an extra teaspoon of sugar into a small amount of warm water and add gradually. Stir to combine.

Transfer the finished Averna to a dark glass bottle or other airtight bottle. Let rest for at least 1 week before regular use to let flavors marry; it will continue to mellow with time.

Serving

Serve Averna chilled or over ice with an orange twist. Use 1.5 oz (45 ml) Averna neat or on the rocks, or 1 oz (30 ml) Averna in cocktails (Negroni variations, spritzes with soda or tonic). Keep refrigerated after opening for best freshness.
