Green Apple Syrup (can be made ahead)
Combine and simmer
Place granulated sugar, water, chopped Granny Smith apple and lemon zest in a small saucepan over medium heat. Stir until sugar dissolves, then bring to a gentle simmer.
Reduce and infuse
Lower heat and simmer for 8–10 minutes until apples are very soft and the liquid is syrupy. Stir occasionally to prevent sticking.
Cool and strain
Remove from heat. Let cool 10 minutes, then strain through a fine mesh sieve, pressing solids to extract as much syrup as possible. Discard solids. Cool syrup to room temperature, then refrigerate. Yields about 6–8 ounces. Keeps refrigerated for up to 2 weeks.
Cocktail Assembly
Combine base ingredients
In a cocktail shaker, add 2 oz gin, 0.5 oz elderflower liqueur, 0.75 oz fresh lemon juice, 0.5 oz green apple syrup, and 1 dash aromatic bitters. Add a generous handful of ice (about 1 cup).
Shake
Shake vigorously for 12–15 seconds until the shaker is very cold and well-chilled.
Double strain
Discard ice from the chilled glass. Double strain the shaken mixture into the chilled coupe using a Hawthorne and fine strainer to remove small ice shards and any pulp.
Top with bubbles
Carefully top the cocktail with 2 oz chilled dry sparkling wine. Pour slowly down the side of the glass to preserve effervescence.
Garnish and finish
Thread two thin apple slices in a small fan and rest them on the rim or float them on the surface. Add a small sprig of fresh mint beside the apple fan. Serve immediately.
