In a large mash tun, combine the Pilsner malt and caramel malt with 5 liters of heated water at around 65°C (149°F). Stir well to ensure all the grains are saturated.

Prepare the Mash

Allow the mash to rest for 60 minutes. Maintain the temperature at 65°C (149°F) to extract the sugars from the grains.

After the rest, drain the liquid wort from the mash tun into a kettle, sparging with additional hot water to extract more sugars. Aim for a total of approximately 6 liters of wort.

Lautering

Bring the wort to a boil, then add the Hallertau hops. Boil for 60 minutes, stirring occasionally.

With 15 minutes left in the boil, add the Saaz hops to the kettle.

After the boil, cool the wort rapidly using a wort chiller or an ice bath until it reaches approximately 20°C (68°F).

Transfer the cooled wort to a fermentation vessel and pitch the lager yeast. Seal the vessel with an airlock.

Allow the beer to ferment at cooler temperatures (around 10°C or 50°F) for 2-3 weeks.

Fermentation

Once fermentation is complete, transfer the beer to a sanitized keg, avoiding sediment at the bottom of the fermentation vessel.

Keg the Beer

Allow the beer to condition for another 1-2 weeks at cool temperatures to develop flavors.

Condition the Beer

Carbonate the beer using CO2 or natural carbonation methods.
